Black and White Bean Chili Recipe

4 servings

A colorful soup, rich in flavor.

 

Ingredients:

12 ounces very lean ground beef

1 cup chopped onion

1/2 cup chopped green bell pepper

2 teaspoons each: minced, jalapeno chili, garlic

2 cans reduced-sodium whole tomatoes, undrained, coarsely chopped

1 can each: Great Northern and black beans, rinsed, drained

1/4 cup sun-dried tomatoes, softened, chopped

2-3 tablespoons chili powder

1-1 1/2 teaspoons each: ground cumin, dried oregano leaves

1 bay leaf

Salt and pepper, to taste

1/4 cup chopped cilantro

Method:

Cook ground beef, onion, bell pepper, jalapeno chili, and garlic in lightly greased large saucepan until beef is browned and vegetables are tender, 8 to 10 minutes. Stir in remaining ingredients, except salt, pepper and cilantro, heat to boiling. Reduce heat and simmer, covered, 30 minutes. Discard bay leaf; season to taste with salt and pepper. Stir in cilantro.
