Asian Black-Eyes Peas and Greens Recipe

Ingredients:

8 ounces snow peas, diagonally halved

1/2 cup each: chopped onions, red or green bell pepper

1 jalapeno chili, finely chopped

1 tablespoon each: finely chopped gingerroot, garlic, Asian sesame oil

3 cups thinly sliced bok choy or Chinese cabbage

2 cans black-eyed peas, rinsed, drained

1-2 tablespoons reduced-sodium tamari soy sauce

1-2 teaspoons hoisin sauce

1 package Chinese style egg noodles, cooked

2 teaspoons sesame seeds, toasted

Method:

Stir-fry snow peas, onion, bell pepper, jalapeno chili, gingerroot, and garlic in sesame oil in wok or large skillet, 5 to 8 minutes. Stir in bok choy, cook, covered, over medium heat until wilted, 2 to 3 minutes. Add black-eyed peas, soy sauce, and hoisin sauce, cook until hot, about 5 minutes. Serve over noodles, sprinkle with sesame seeds.
