Turkey Sausage-Stuffed Acorn Squash Recipe

4 servings



2 acorn squash, halved, seeded

1 small onion, chopped

1 clove garlic, minced

8 ounces Italian-style turkey sausage, casing removed

1/2 cup each: chopped tomato, cooked rice

1/2 teaspoon each: dried sage and thyme leaves

Salt and pepper, to taste


Place squash, cut sides down, in baking pan, add 1/2 inch water. Bake, covered, at 400 degrees until flesh is fork-tender, about 30 minutes. Drain.


Saute onion, garlic and sausage in lightly greased large skillet until browned, about 5 minutes. Add tomato, rice, sage and thyme. Cook over medium heat until mixture is hot, about 5 minutes, season to taste with salt and pepper. Serve mixture in squash halves.
