Turkey Cutlets with Sage Recipe4 servings
Ingredients: 1 pound turkey breast cutlets 2 tablespoons red wine vinegar 2 teaspoons each: minced garlic, dried sage leaves 1/4 teaspoon each: salt, pepper Flour 2 teaspoons olive oil 1/2 cup reduced-sodium fat-free chicken broth 1 tablespoon lemon juice |

Method: Pound turkey cutlets with flat side of meat mallet to 1/4 inch thickness, brush with combined vinegar, garlic, sage, salt and pepper. Let stand 5 minutes. Coat both sides of cutlets lightly with flour, saute in oil in large skillet until browned and cooked, 2 to 3 minutes on each side. Remove cutlets to platter and keep warm. Heat broth and lemon juice to boiling in skillet, boil until slightly thickened. Spoon over cutlets. |
