Roasted Vegetables, Turkey Sausage, and Mushroom Tortellini Recipe4 servings
Ingredients: 1 cup each: cubed plum tomatoes, halved mushrooms, sliced zucchini, yellow summer squash, broccoli florets 12 ounces low-fat smoked turkey sausage, sliced Vegetable cooking spray 1 1/2 teaspoons dried Italian seasoning Salt and pepper, to taste 1 package fresh mushroom or herb tortellini, cooked, warm 1-2 tablespoons olive oil |

Method: Arrange vegetables and sausage in single layer on greased foil-lined jelly roll pan, spray generously with cooking spray. Sprinkle with Italian seasoning salt, and pepper. Roast at 425 degrees until vegetables are browned, about 40 minutes, removing broccoli and sausage after 20 minutes. Combine vegetables, sausage, and tortellini, drizzle with olive oil and toss. |
