Fennel Pesto Recipe

Makes 1 1/2 cups



1 tablespoon fennel seeds

3 tablespoons hot water

1 cup chopped fennel bulb

1/2 cup loosely packed parsley

2 cloves garlic

14 walnut halves

1 tablespoon olive oil

1/4 cup grated Parmesan cheese


Pour hot water over fennel seeds in bowl to cover. Let stand 10 minutes. Process fennel seeds and remaining ingredients in food processor or blender until very finely chopped.
