Dijon Chicken Casserole Recipe6 servings
Ingredients: 1 cup uncooked rice 6 boneless, skinless chicken breast halves 1 each: medium zucchini, large red bell pepper, sliced 1/2 cup each: dry white wine, reduced-sodium chicken broth 1/4 cup Dijon mustard Salt and pepper, to taste 1 cup unseasoned dry bread crumbs 1/2 cup grated Parmesan cheese 2 tablespoons dried tarragon leaves |

Method: Spread rice in greased 12 x 8-inch baking dish. Arrange chicken over rice and top with vegetables. Pour combined wine, broth, and mustard over vegetables and chicken. Sprinkle lightly with salt and pepper. Combine remaining ingredients, sprinkle over vegetables. Bake, covered, at 350 degrees 40 minutes; uncover and bake until rice and chicken are tender with liquid is absorbed, about 10 minutes longer.
