Chicken Veronique Recipe4 servings
Ingredients: 1 cup sliced mushrooms 2 tablespoons each: sliced green onions, vegetable oil 1 pound boneless, skinless chicken breast, cubed 1 tablespoon flour 1/4 cup dry white wine or reduced-sodium chicken broth 1 cup each: reduced-sodium fat-free chicken broth, halved seedless green grapes 1 tablespoon drained capers Salt and pepper, to taste 2 cups cooked rice, warm |

Method: Saute mushrooms and green onions in oil in large skillet until tender, about 5 minutes; add chicken and saute until browned, about 5 minutes. Sprinkle with flour and cook 1 minute. Stir in white wine and broth, heat to boiling. Reduce heat and simmer, covered, until chicken is cooked, 5 to 8 minutes. Stir in grapes and capers, season to taste with salt and pepper. Serve over rice.
