Chicken with Gingered Honey-Orange Sauce Recipe

The sauce combines gingerroot, honey and orange for delicious flavor.

 

Ingredients:

8 skinless chicken breast halves

Vegetable cooking spray

Paprika, salt and pepper

Gingered Honey-Orange Sauce

 

For Gingered Honey-Orange Sauce

1 cup orange juice

2 tablespoons honey

Grated zest of 1 orange

1-2 tablespoons finely chopped gingerroot

1 tablespoon flour

1 orange, peeled, cut into segments

Method:

Place chicken in greased baking pan: spray lightly with cooking spray and sprinkle with paprika, salt and pepper. Bake, uncovered, at 350 degrees until chicken browned and juices run clear, 30 to 40 minutes, basting occasionally with Gingered Honey Orange Sauce. Serve with remaining sauce.

 

To make Gingered Honey-Orange Sauce

Combine all ingredients, except orange segments, in small saucepan; heat to boiling. Boil, whisking until thickened, about 1 minute; stir in orange segments and cook over low heat 2 to 3 minutes.
