Chicken Fricassee Recipe6 servings
Ingredients: 6 skinless chicken breast halves 1 cup each: onion wedges, sliced carrots, celery 2 cloves garlic, minced 3 tablespoons flour 2 cans reduced-sodium fat-free chicken broth 16 whole cloves, tied to cheesecloth 2 bay leaves 1 teaspoon lemon juice 1/2 teaspoon each: sugar, salt 1/4 teaspoon pepper 12 ounces fettuccine, cooked, warm |

Method: Cook chicken in lightly greased large skillet over medium heat until browned, about 8 minutes. Remove from skillet. Add vegetables to skillet, saute 5 minutes. Stir in flour and cook 1 minute. Return chicken to skillet. Add remaining ingredients, except pasta, heat to boiling. Reduce heat and simmer, covered, until chicken is tender, about 20 minutes, simmer, uncovered, until sauce is thickened to medium consistency, about 10 minutes. Discard cloves and bay leaves. Serve with fettuccine. |
