Chicken Breast with Rosemary Recipe4 servings Easy, yet elegant, this healthful entree is good served with a risotto and a simple vegetable or salad.
Ingredients: 1 tablespoon olive oil 1 1/2 teaspoons balsamic vinegar 1 teaspoon minced garlic 1 tablespoon finely grated lemon zest 1/4 teaspoon, skinless chicken breast halves 1/2-3/4 cup dry white wine or reduced-sodium chicken broth 1/2 cup chopped tomato 1 teaspoon finely chopped fresh or 1/2 teaspoon dried rosemary leaves |

Method: Brush combined olive oil, vinegar, garlic, lemon zest, salt and pepper over chicken; let stand 10 minutes. Cook chicken in lightly greased large skillet over medium heat until browned, about 5 minutes on each side. Add wine, tomato and rosemary to skillet and heat to boiling; reduce heat and simmer, covered, until chicken is cooked, about 15 minutes.
