Chicken Athenos Recipe

Ingredients:

1 pound boneless, skinless chicken breast, cubed

1 teaspoon olive oil

1 can reduced-sodium stewed tomatoes, undrained

1 tablespoon lemon juice

2 teaspoons minced garlic

1 each: cinnamon stick, bay leaf

1/4 cup dry sherry or reduced-sodium chicken broth

Salt and pepper, to taste

8 ounces egg noodles, cooked, warm

1/4 cup crumbled feta cheese

Method:

Saute chicken in oil in large saucepan until lightly browned. Add tomatoes with liquid, lemon juice, garlic, cinnamon stick, bay leaf, and sherry. Heat to boiling, reduce heat and simmer, covered, until chicken is cooked, about 15 minutes. Season to taste with salt and pepper, discard bay leaf and cinnamon stick. Toss mixture with noodles, sprinkle with cheese.
