Caribbean-Style Chicken Stew Recipe

Ingredients:

12 ounces boneless, skinless chicken breast, cubed

1 medium onion, chopped

1 teaspoon olive oil

1 can each: rinsed drained garbanzo beans, undrained reduced-sodium diced tomatoes

1 can reduced-sodium fat-free chicken broth

2 cups packed spinach leaves

2 tablespoons sofrito sauce (optional)

Salt and pepper, to taste

1/4 cup silvered almonds, toasted

Method:

Saute chicken and onion in oil in large saucepan until chicken is lightly browned, about 8 minutes. Add beans, tomatoes with liquid, and broth and heat to boiling, reduce heat and simmer, covered, 10 minutes. Stir in spinach and sofrito, simmer until spinach is wilted, 5 minutes. Season to taste with salt and pepper. Sprinkle each bowl of stew with almonds.
