Cajun Chicken Recipe4 servings Package cajun seasoning can be purchased, but we particularly like our homemade blend - try it with beef and pork too!
Ingredients: 4 boneless, skinless chicken breast halves Butter-flavored vegetable cooking spray Cajun seasoning
For Cajun seasoning: 2 teaspoons paprika 1 teaspoon each: onion powder, garlic powder 1/2 teaspoon each: dried thyme and oregano leaves, cayenne and black pepper 1/4 teaspoon salt |

Method: Spray both sides chicken breast with cooking spray, sprinkle with cajun seasoning. Grill chicken over medium-hot coals, or broil 5 inches from heat source, until chicken is cooked and juices run clear, about 5 to 8 minutes on each side.
Mix all cajun seasoning ingredients, store in airtight container.
