Warm Pappardelle with Cajun Shrimp Recipe4 servings Any of the wide, flat pastas, such as mafalde or trenette, are also appropriate for this highly spiced dish.
Ingredients: 1/3 cup each: sliced red bell pepper, onion 12 ounces peeled, deveined shrimp 2 teaspoons each: dried oregano, basil, and thyme leaves 1/2 teaspoon each: garlic powder, paprika 1/4 teaspoon each: cayenne and black pepper, salt 1 cup reduced-sodium chicken broth 1/4 cup dry white wine or water 1 tablespoon tomato paste 8 ounces pappardelle, cooked, warm |

Method: Saute bell pepper and onion in lightly greased large skillet until tender, 3 to 4 minutes. Stir in shrimp and seasonings, cook over medium heat until shrimp just begin to turn pink, about 2 minutes. Stir in broth, wine, and tomato paste, heat to boiling. Reduce heat and simmer, uncovered 5 minutes. Serve over pasta.
