Turkey and Herbed Cheese Ravioli with Wild Mushroom Sauce Recipe4 servings
Ingredients: 8 ounces ground turkey 1 small onion, minced 2 cloves garlic, minced 1 cup reduced-fat ricotta cheese 1 teaspoon dried rosemary leaves 32 wonton wrappers Wild Mushroom Sauce |

Method: Cook turkey in lightly greased small skillet over medium heat until browned, about 5 minutes. Add onion and garlic to skillet, and saute until onion is tender, about 5 minutes. Remove from heat, mix in ricotta cheese and rosemary. Spoon about 1 tablespoon cheese mixture on wonton wrapper, brush edges of wrapper with water. Top with a second wonton wrapper and press edges together to seal. Repeat with remaining wonton wrappers and cheese mixture.
Add 6 ravioli to 2 quarts boiling water in large saucepan, reduce heat and simmer, uncovered, until ravioli float to the surface and are al dente, 3 to 4 minutes. Remove with slotted spoon. Repeat with remaining ravioli. Serve with Wild Mushroom Sauce. |
