Tortellini with Tuna Recipe

Tortellini with Tuna Recipe

8 servings



12 ounces cheese tortellini, cooked, room temperature

1 cup fresh or frozen, thawed peas

1/2 cup each: sliced green onions, chopped green bell pepper, parsley

1 can artichoke hearts, drained, quartered

1 can solid white tuna in water, drained

1/4 cup chopped fresh or 2 teaspoons dried basil

Tomato Vinaigrette

Salt and pepper, to taste


Tomato Vinaigrette

2 small tomatoes, quartered

2 tablespoons each: white wine vinegar, extra-virgin olive oil

2 teaspoons Dijon mustard

1 teaspoon each: chopped garlic, dried oregano and basil leaves

1/4 cup grated fat-free Parmesan cheese


Toss all ingredients, except salt and pepper, in salad bowl, season to taste with salt and pepper.


Tomato Vinaigrette:

Process all ingredients in blender until smooth.
