Rotini and Beans Nicoise Recipe6 servings
Ingredients: 1/2 cup chopped shallots or red onion 2 cups chopped Italian plum tomatoes 1 teaspoon minced garlic 2 teaspoons margarine or butter 2 cups diagonally sliced green beans, cooked 1 can baby lima beans, rinsed, drained 1 can cannellini beans, rinsed, drained 2 tablespoons drained capers 1/2 teaspoon dried tarragon leaves 6 cups cooked rotini or other shaped pasta, warm Salt and pepper, to taste Grated parmesan cheese, as garnish |

Method: Saute shallots, tomatoes, and garlic in margarine in large skillet 2 to 3 minutes, cook, covered, over medium heat until tomatoes are wilted, 3 to 5 minutes. Stir in fresh and canned beans, capers, and tarragon: cook, covered, over medium heat until hot, about 5 minutes. Stir in rotini and season to taste with salt and pepper, sprinkle with parmesan cheese. |
