Primavera Sauce Recipe

3 cups



3 tablespoons margarine or butter

1/4 cup all-purpose flour

2 cups 2% reduced-fat milk

1/4 cup dry white wine or reduced-sodium chicken broth

2 cups each: broccoli and cauliflower florets, cooked crisp-tender

1 cup diagonally sliced carrots, cooked crisp-tender

1 medium bell pepper, sliced

1/4 cup grated Parmesan cheese

1/4 teaspoon each: ground nutmeg, salt, pepper


Melt margarine in large saucepan, add flour and stir over medium heat 1 minute. Stir in milk and wine, heat to boiling. Boil, stirring until thickened, about 1 minute. Stir in vegetables and cook over medium heat until hot, 2 to 3 minutes. Remove from heat stir in remaining ingredients.
