Pasta with Three-Onion Sauce Recipe

6 servings



1 1/2 cups each: sliced leeks (white parts only), chopped red onions

6 shallots, diced

3 tablespoons olive oil

1/4 cup all-purpose flour

1 can reduced-sodium fat-free chicken broth

1/4 teaspoon each: dried thyme leaves, pepper

1/2 teaspoon salt

12 ounces mafalde or other flat pasta, cooked, warm


Sauté leeks, onions, and shallots in oil in medium saucepan 2 to 3 minutes. Reduce heat to medium-low and cook slowly until mixture is golden, about 15 minutes. Stir in flour, cook over medium heat 1 to 2 minutes. Add broth, thyme, salt and pepper, heat to boiling, stirring until thickened, about 1 minute. Serve over mafalde.
