Pasta Nicoise Recipe

4 servings



3 cups cooked small pasta shells, room temperature

12 - 16 Greek olives, pitted, sliced

2 cups fresh green beans, cooked

1/4 cup sliced green onions

1 tomato, chopped

1 can solid white tuna in water, drained

Salt and pepper, to taste


Nicoise Dressing :

1/2 cup loosely packed parsley

1/4 cup each: tarragon wine vinegar, water

1 large clove garlic

1 - 2 tablespoons olive oil

1/2 teaspoon Dijon mustard

1 teaspoon dried oregano leaves


Toss all ingredients, except salt and pepper, in salad bowl, season to taste with salt and pepper.


Nicoise Dressing:

Process all ingredients in blender until smooth.
