Molded Capellini Carbonara Recipe4 servings Thin spaghetti or linguine can be substituted for the angel hair pasta. The center of the mold can be filled with a mixture of vegetables
Ingredients: 1/4 cup minced shallots 1 teaspoon minced garlic 1 cup seeded chopped Italian plum tomatoes 1/2 teaspoon dried oregano leaves 1/4 teaspoon crushed red pepper 2 slices bacon, fried crisp, crumbled Salt and pepper, to taste 8 ounces capellini, cooked 3 eggs, lightly beaten |

Method: Saute shallots and garlic in lightly greased skillet until tender, 3 to 4 minutes. Add tomatoes, oregano and crushed red pepper. Cook, covered, over medium heat until tomatoes soften, about 4 minutes, stir in bacon and season to taste with salt and pepper. Combine with pasta and eggs and spoon into greased 6-cup ring mold. Bake, uncovered at 350 degrees until set, about 20 minutes. Invert onto serving plate.
