Lazy Lasagna Recipe4 servings
Ingredients: 6 no-boil lasagna noodles 1 can cannellini or other white beans, rinsed, drained, slightly mashed 1 cup reduced-fat cottage cheese 1 cup shredded Italian 6-cheese blend, divided 1 can reduced-sodium diced tomatoes 1 tablespoon minced roasted garlic |

Method: Place 2 lasagna noodles in lightly greased 8-inch square baking pan. Top with 1/2 the beans and cottage cheese, and 1/3 cup shredded cheese. Repeat layers, ending with 2 lasagna noodles. Spoon combined diced tomatoes and roasted garlic over top of lasagna. Bake, covered, at 375 degrees until noodles are tender, about 30 minutes. Uncover and sprinkle with remaining 1/3 cup cheese, let stand 5 to 10 minutes before serving. |
