Curried Tortellini with Beans and Squash Recipe

Ingredients:

1 1/3 cups coarsely chopped onions

2/3 cup red bell pepper

2 teaspoons minced garlic

1 teaspoon curry powder

1 tablespoon olive oil

2 cups each: diagonally sliced green beans, cubed butternut or acorn squash

1/4 cup water

1 cup reduced-fat coconut milk

2 packages mushroom or herb tortellini, cooked, warm

Salt and pepper, to taste

3 tablespoons chopped cilantro

Method:

Saute onions, bell pepper, garlic, and curry powder in oil in large skillet unitl onions are tender, 3 to 4 minutes. Add green beans, squash and water, heat to boiling. Reduce heat and simmer, covered, until vegetables are tender, 6 to 8 minutes. Stir in coconut milk and tortellini, cook until hot, 2 to 3 minutes. Season to taste with salt and pepper, sprinkle with cilantro.
