Butter Beans, Mostaccioli and Ham Recipe

4 servings



4 ounces lean reduced-sodium ham, diced

1 small mild chili pepper, chopped

2 teaspoons garlic

1 1/2 cups frozen, thawed small butter beans

1/3 cup water

1/2 cup sliced green onions

1/2 can anchovies, rinsed, drained, mashed

1/4 cup grated Romano cheese

8 ounces mostaccioli, cooked, warm


Sauté ham, chili pepper and garlic in lightly greased medium skillet until lightly browned, about 5 minutes. Add beans and water and heat to boiling. Reduce heat and simmer until tender, 3 to 4 minutes. Combine ham mixture with remaining ingredients and toss.
