Asian Noodle Salad Recipe

4 servings

 

Ingredients:

8 ounces fresh Chinese egg noodles, cooked

1 cup each: shredded carrot, seeded, cubed cucumber

1/2 cup chopped red bell pepper

1/4 cup each: sliced green onions, chopped cilantro

 

Yogurt Dressing :

1 cup fat-free plain yogurt

1/4 cup reduced-fat peanut butter

2 tablespoons rice wine vinegar

1 tablespoon each: reduced-sodium tamari soy sauce, sugar, minced gingerroot

1 teaspoon Asian sesame oil

1/2 teaspoon each: 5-spice powder, minced garlic, cayenne pepper

Method:

Combine all ingredients and toss.

 

Yogurt Dressing:

Mix all ingredients.
