Angel Hair and Goat Cheese Salad  Recipe

Ingredients:

2 cups each: halved snow peas, sliced mushrooms

3 medium carrots, julienned

4 large plum tomatoes, sliced

2 teaspoons dried oregano leaves

1 teaspoon dried tarragon leaves

1/2 cup each: reduced-sodium vegetable broth, fat-free milk

2 teaspoons tomato paste

1/4 teaspoon each: salt, pepper

12 ounces capellini (angle hair) or thin spaghetti cooked, warm

3 ounces goat cheese or reduced-fat cream cheese

Method:

Saute vegetables and herbs in lightly greased large skillet until snow peas are crisp-tender, 6 to 8 minutes. Stir in broth, milk and tomato paste, heat to boiling. Reduce heat and simmer, uncovered, until thickened to sauce consistency, about 10 minutes, stirring occasionally. Stir in salt and pepper. Toss with pasta and goat cheese.
