Vegetable Stuffed Flank Steak Recipe4 servings Serve with oven-roasted potatoes and a salad for a well-rounded and delicious meal.
Ingredients: 1 pound beef flank steak 1 cup fat-free Italian salad dressing Vegetable stuffing (recipe follows) 1 cup reduced-sodium fat-free beef broth
Vegetable Stuffing 8 ounces sliced mushrooms 1/4 cup each: chopped carrot, thinly sliced celery, green onions. 1 clove garlic, minced 1/4 cup unseasoned dry bread crumbs 1 1/2 teaspoons dried Italian seasoning Salt and pepper, to taste |

Method: Saute mushrooms, carrot, celery, green onions, and garlic in lightly greased large skillet until tender, about 5 minutes. Add bread crumbs and Italian seasoning and cook until browned, 2 to 3 minutes, season to taste with salt and pepper.
