Veal with Herbed Mushrooms Recipe4 servings
Ingredients: 4 boneless veal chops, fat trimmed 1-2 teaspoons margarine or butter 2 medium onions, chopped 1 pound mushrooms, sliced 1 tablespoon each: flour, tomato paste 1 cup reduced-sodium chicken broth 1/2 cup dry white wine or reduced-sodium chicken broth 1 teaspoon dried Italian seasoning 1 small bay leaf 1/4 - 1/2 cup sliced black olives 1/4 teaspoon each: salt and pepper |

Method: Cook veal chops in margarine in large skillet over medium heat until browned, 3 to 4 minutes on each side, transfer to baking dish. Add onions and mushrooms to skillet, saute until tender, about 10 minutes, sprinkle with flour and cook 1 minute. Stir in remaining ingredients and heat to boiling, spoon mixture over veal chops. Bake, covered, at 325 degrees until veal is tender, about 30 minutes. |
