Tournedos Bearnaise Recipe4 servings Enjoy this healthy, low-fat version of the classic.
Ingredients: 4 slices Italian bread (3/4-inch) Vegetable cooking spray 1 clove garlic, halved 4 beef tenderloin steaks (4 ounces each), fat trimmed Salt and pepper, to taste Mock Bearnaise Sauce (recipe follows)
Mock Bernaise Sauce 6 ounces fat-free cream cheese 1/3 cup fat free sour cream 3-4 tablespoons fat-free milk 2 teaspoons each: minced shallot, lemon juice 1/2 - 1 teaspoon Dijon mustard 1 1/2 teaspoons dried tarragon leaves Salt and white pepper, to taste |

Method: Spray bread slices with cooking spray; broil 6 inches from heat source until browned, 2 to 3 minutes on each side. Rub bread slices with cut sides of garlic. Saute steaks in lightly greased medium skillet to desired degree of doneness, 3 to 4 minutes on each side for medium, season to taste with salt and pepper. Arrange steaks on bread slices, spoon Mock Bernaise Sauce over.
For Mock Bernaise Sauce: Heat all ingredients, except salt and pepper, in small saucepan over medium-low heat until melted and smooth, stirring constantly, season to taste with salt and pepper. Serve immediately.
