Steak Au Poivre Recipe

Beef eye of round steak is a healthy choice for this entree as it has less than 30% calories from fat.

 

Ingredients:

4 teaspoons coarsely crushed black peppercorns

4 beef eye of round or tenderloin steaks, fat trimmed

Salt, to taste

1/3 cup brandy or beef broth

1/4 cup fat-free sour cream

Method:

Press peppercorns onto both sides of steaks, sprinkle lightly with salt. Saute in lightly greased medium skillet over medium heat to desired medium skillet over medium heat to desired degree of doneness, 3 to 4 minutes on each side for medium. Remove steaks and keep warm. Add brandy to skillet, heat to boiling. Boil, scraping bottom of skillet to loosen cooked particles, until reduced to about 2 tablespoons, 2 to 3 minutes. Stir in sour cream and cook over low heat 1 to 2 minutes. Spoon over steaks.
