Savory Stew Pork and Chorizo Recipe

6 servings

 

Ingredients:

12 ounces pork tenderloin, fat trimmed, cubed

Chorizo

1 small onion, sliced

1 clove garlic, minced

2 large tomatoes, chopped

1/4 teaspoon each: dried oregano and thyme leaves

1 bay leaf

2-3 pickled jalapeno chilies, finely chopped

1 tablespoon pickled jalapeno chili juice

Salt and pepper, to taste

4 cups cooked rice, warm

Method:

Cover pork with 2 inches simmering water in medium saucepan, covered, until tender, 20 to 30 minutes. Cool, drain, reserving 1/4 cup broth. Finely shred pork.

 

Cook Chorizo in lightly greased large skillet over medium heat until browned, remove from skillet and crumble. Add onion and garlic to skillet, saute 2 to 3 minutes. Add tomatoes and herbs and cook over medium heat 5 minutes, stirring occasionally. Add pork, Chorizo, reserved broth, jalapeno chilies, and jalapeno juice to skillet. Cook, uncovered, over medium heat, about 10 minutes, stirring occasionally (mixture should be moist). Discard bay leaf, season to taste with salt and pepper. Serve over rice.
