Pork Tenderloin with Green Peanut Sauce Recipe4 servings
Ingredients: 1 1/2 pound pork tenderloin, fat trimmed, sliced Salt and pepper, to taste 1 cup Tomatillo Sauce 1/2 cup chopped dry-roasted peanuts 4 cups cooked rice, warm |

Method: Sauté pork in lightly greased large skillet until cooked, 3 to 4 minutes on each side. Sprinkle lightly with salt and pepper. Add Tomatillo Sauce and peanuts to skillet, heat until hot. Serve over rice. |
