Pork with Peppers and Onions Recipe

Ingredients:

1 pound pork tenderloin, fat trimmed cut into strips

1 tablespoon olive oil

1 can reduced-sodium tomato sauce

1 package frozen pepper and onion blend

2 tablespoons dry sherry

1 teaspoon each: minced garlic, dried basil and thyme leaves

Salt and pepper, to taste

8 ounces tricolor rotini, cooked, warm

Method:

Cook pork in olive oil in large skillet until browned, about 5 minutes, add tomato sauce, pepper and onion blend, sherry, garlic and herbs. Heat to boiling, reduce heat and simmer, covered, until pork is tender, about 10 minutes. Simmer, uncovered, until thickened, 2 to 3 minutes. Season to taste with salt and pepper. Serve over pasta.
