Pork Medallions with Yogurt-Sauced Fettuccine Recipe4 servings
Ingredients: 12 ounces pork tenderloin, sliced 1/2 cup apple juice 1 small onion, chopped 4 small shallots, quartered 1/4 teaspoon dried sage leaves 2 tablespoons flour 1 container plain low-fat yogurt Salt and pepper, to taste 8 ounces spinach fettuccine, cooked, warm |

Method: Saute pork medallions in lightly greased skillet until browned and cooked, 3 to 4 minutes on each side, remove from skillet. Add apple juice, onion, shallots, and sage, heat to boiling. Reduce heat and simmer, covered, until onion is tender, about 5 minutes. Stir in combined flour and yogurt, stirring until thickened, about 1 minute, season to taste with salt and pepper. Add pork and cook over low heat 2 minutes, serve over fettuccine. |
