Mustard Roast Beef Recipe6 serving The spicy coating makes this roast beef extra juicy and flavorful.
Ingredients: 1/4 cups apricot preserves 2-4 tablespoons spicy brown mustard 2-3 teaspoons reduced-sodium Worcestershire sauce 1 tablespoon each: light brown sugar, prepared horseradish 1 teaspoon each : crushed caraway seeds, black peppercorns 1/4 teaspoon ground all spice 1 boneless beef sirloin tip roast, fat trimmed (about 2 pounds) |

Method: Mix all ingredients, except beef, spread on all surfaces of beef. Place beef on rack in roasting pan; roast at 325 degrees to desired doneness, 160 degrees for medium, 45 to 60 minutes. Let stand 10 minutes before slicing.
