Ham and Potato Casserole Au Gratin Recipe

6 large red potatoes, peeled, thinly sliced, divided

12-16 ounces reduced-sodium ham, fat trimmed, cubed

1 small green bell pepper, finely chopped

3 green onions, sliced

1/2-1 cup shredded reduced-fat Cheddar cheese

White sauce

1/4-1/2 cup unseasoned dry bread crumbs


Arrange half the potatoes in greased 2 quart casserole, over-lapping slightly, sprinkle with ham, bell pepper, and green onions. Top with remaining potatoes and sprinkle with cheese. Pour white sauce over. Bake, covered, at 375 degrees for 45 minutes. Sprinkle with bread crumbs and bake, uncovered, until potatoes are tender and casserole is golden brown, 15 to 20 minutes.
