Goulash Casserole Recipe6 servings
Ingredients: 1 pound ground beef eye of round 2 medium onions, chopped 1 1/2 cups chopped red and green bell pepper 2 cloves garlic, minced 1 tablespoon flour 2 teaspoons paprika 1 teaspoon crushed caraway seeds 1 can sauerkraut, rinsed, drained 1 large tomato, coarsely chopped 1 cup fat-free sour cream Salt and pepper, to taste |
Method: Cook ground beef in lightly greased large skillet until browned, about 8 minutes, add onions, bell peppers, and garlic and cook until tender, 8 to 10 minutes. Stir in flour, paprika and caraway seeds, cook 1 minute. Spoon into greased 2-quart casserole. Stir in sauerkraut, tomato, and sour cream; season to taste with salt and pepper. Bake, covered, at 350 degrees until hot, about 30 minutes.
