Fettuccine with Pork, Greens, and Caramelized Onions Recipe

Ingredients:

4 medium onions, sliced

1 tablespoon olive oil

1 teaspoon sugar

2 cans reduced-sodium fat-free chicken broth

4 cups thinly sliced greens

1/4 teaspoon each: salt, pepper

8 ounces fettuccine, cooked, warm

12 ounces pork tenderloin, fat trimmed, sliced

Method:

Saute onions in oil in large skillet 5 minutes, reduce heat to low and stir in sugar. Cook over medium-low heat until onions are golden in color and very soft, about 20 minutes. Stir in chicken broth and heat to boiling, reduce heat and simmer, uncovered, until broth is reduced by 1/3, about 10 minutes. Add greens, simmer, covered, until wilted, 5 to 7 minutes. Simmer, uncovered, until broth is almost evaporated, about 5 minutes. Stir in salt and pepper. Toss with pasta.

 

Saute pork slices in lightly greased large skillet until cooked and browned, about 5 minutes. Arrange on pasta.
