Black Bean and Beef Burritos Recipe

4 servings



1/2 cup each: chopped poblano chili, onion

1 clove garlic, minced

1 bay leaf, crumbled

1 can black beans, rinsed, drained

1 can reduced-sodium tomato sauce

Salt and pepper, to taste

Beef filling

4 large flour tortillas, warm

1/2 cup each: shredded fat-free Cheddar cheese, fat-free sour cream

2 tablespoons finely chopped cilantro


Saute poblano chili, onion, garlic, and bay leaf in lightly greased large skillet until onion is tender, about 5 minutes. Add beans and tomato sauce, heat until hot. Season to taste with salt and pepper. Spoon bean mixture and beef filling onto tortillas, top with cheese, sour cream and cilantro. Roll up, fold one end up to prevent filling from leaking out.
