Beef Filling Recipe

4 cups



12 ounces beef eye of round, fat trimmed, cubed

2 medium tomatoes, coarsely chopped

1/2 teaspoon ground cinnamon

Salt and pepper, to taste


Cook beef in 2 inches simmering water in medium saucepan, covered, until tender, 15 to 20 minutes, drain. Cool slightly, shred finely. Saute beef in lightly greased medium skillet until beginning to brown, 3 to 4 minutes. Add tomatoes and cinnamon, cook until tomatoes are wilted. Season to taste with salt and pepper.
