Beef Braised in Red Wine Recipe6 servings
Ingredients: 1 1/2 pounds boneless beef round steak, fat trimmed, cubed 1 tablespoon olive oil 1 cups sliced mushrooms 1 cup each: chopped onion, celery 1 large clove garlic, minced 2 tablespoons flour 1 cup each: reduced-sodium fat-free beef broth, dry red wine or water 1 can reduced-sodium tomato sauce 12 baby carrots 6 medium potatoes, halved 1 teaspoon dried thyme leaves 2 large bay leaves 1/2 teaspoon dry mustard Salt and pepper, to taste |

Method: Saute beef in oil in Dutch oven until browned, about 5 minutes, remove from pan. Add mushrooms, onion, celery, and garlic to pan, cook 5 minutes. Stir in flour and cook 1 minute. Add beef, broth and remaining ingredients, except salt and pepper, and heat to boiling, transfer to oven and bake, covered, at 350 degrees until beef is tender, about 1 hour. Season to taste with salt and pepper, discard bay leaves.
