Apricot Stuffed Pork Tenderloin Recipe4 servings
Ingredients: 1 pound pork tenderloin, fat trimmed 1 can apricot halves, drained, chopped 1 each: rib celery, small onion, finely chopped 1/8 teaspoon each: ground cinnamon, black pepper 2 cups seasoned croutons 2/3 cup reduced-sodium fat-free chicken broth |

Method: Slice tenderloin lengthwise, cutting to, but not through, opposite side. Pound meat with flat side of meat mallet to rectangle about 10 x 6 inches.
Combine remaining ingredients, except broth in bowl, pour broth over and toss. Spoon mixture evenly over tenderloin, roll up, starting from short side. Tie meat with kitchen string at 1-inch intervals. Bake at 325 degrees until pork is cooked, 45 to 60 minutes. |
