Tuna Patties with Creamed Pea Sauce Recipe4 servings
Ingredients: 2 cans light tuna packed in water, drained 3/4 cup unseasoned dry bread crumbs, divided 1/4 cup each: finely chopped onion, celery 2 tablespoons chopped green bell pepper 3 tablespoons fat-free mayonnaise 2 teaspoons Worcestershire sauce Salt and cayenne pepper, to taste 1 egg
Creamed Pea Sauce: 2 tablespoons each: margarine or butter, flour 1 cup each: fat-free half and half or fat-free milk, frozen, thawed peas Salt and pepper, to taste |

Method: Combine tuna, 1/2 cup bread crumbs, onion, celery, bell pepper, mayonnaise, and Worcestershire sauce in medium bowl, season to taste with salt and cayenne pepper. Mix in egg, shape into 4 patties, about 1/2 inch thick and coat with remaining 1/4 cup bread crumbs. Cook patties in lightly greased medium skillet over medium heat until browned, about 5 minutes on each side. Serve with creamed pea sauce.
Cream Pea Sauce: Melt margarine in small saucepan, stir in flour and cook 1 minute. Whisk in half and half, heat to boiling. Boil, whisking until thickened, about 1 minute. Stir in peas, cook over low heat 2 to 3 minutes. Season to taste with salt and pepper. |
