Tuna Pasta Salad Recipe

6 servings

 

Ingredients:

12 ounces penne or mostaccioli, cooked, room temperature

1 can quartered artichoke hearts, drained

4 plum tomatoes, coarsely chopped

1 1/2 cups cubed zucchini

1/4 cup each: sliced green onion tops, black olives

Italian Dressing

2 cans white tuna in water, drained, flaked

Salt and pepper, to taste

 

Italian Dressing:

1/4 cup olive oil

1 tablespoon each: lemon juice, red wine vinegar, water

1/2 teaspoon each: minced garlic, dry mustard, sugar, dried oregano and thyme leaves

Method:

Combine all ingredients, except salt and pepper, in large bowl, tossing lightly, season to taste with salt and pepper.

 

Italian Dressing:

Combine all ingredients.
