Shrimp Tostadas Recipe4 servings
Ingredients: 12-16 ounces peeled, deveined medium shrimp 1 small onion, chopped 1/2 sereno chili, finely chopped 1 cup chili tomato sauce, warm 4 corn tortillas 2 cups chopped romaine lettuce 1 medium tomato, chopped 1/4 cup crumbled Mexican white or fat-free feta cheese Guacamole |

Method: Reserve 4 shrimps for garnish: coarsely chop remaining shrimp. Cook whole and chopped shrimp, onion, and serrano chili in lightly greased medium saucepan until shrimps are cooked, 3 to 5 minutes. Stir Chili Tomato Sauce into shrimp mixture.
Cook tortillas in lightly greased medium skillet until crisp and browned, about 1 minute on each side. Top tortillas with lettuce and tomato, spoon shrimp mixture over. Sprinkle with crumbled cheese, top each tostada with Guacamole and a whole shrimp. |
