Shrimp and Sausage Gumbo Recipe4 servings
Ingredients: 4 ounces smoked turkey sausage, halved, thinly sliced 1 red bell pepper, chopped 1 clove garlic, minced 1 teaspoon margarine or butter 2 cans reduced-sodium stewed tomatoes, undrained 8 ounces each: fresh or frozen sliced okra, peeled deveined shrimp 1/2 teaspoon crushed red pepper Salt, to taste 3 cups cooked rice, warm |

Method: Saute sausage, bell pepper, and garlic in margarine in large saucepan until browned, about 5 minutes. Stir in tomatoes with liquid, okra, shrimp, and crushed red pepper, heat to boiling. Reduce heat and simmer, covered, until shrimp are cooked and pink, about 5 minutes. Season to taste with salt. Serve over rice in bowls. |
