Shrimp Diane Recipe4 servings
Ingredients: 1/2 cup sliced mushrooms 2 tablespoons minced shallots 1 tablespoon margarine or butter 1 can quartered artichoke hearts, drained 1/4 cup each: dry white wine or reduced-sodium chicken broth, chopped chives, pimiento 12-16 ounces peeled, deveined shrimp Salt and pepper, to taste Chopped parsley, as garnish |

Method: Saute mushrooms and shallots in margarine in large skillet until tender, about 5 minutes, add artichoke hearts, wine, chives, and pimiento and cook, covered, over medium heat 2 minutes. Add shrimp and cook until shrimps are cooked, 3 to 5 minutes. Season to taste with salt and pepper. Sprinkle with parsley. |
