Shrimp with Artichokes and Peppers Recipe6 servings
Ingredients: 2 cups frozen stir-fry pepper blend 1 teaspoon minced garlic 1 tablespoon olive oil 1 can reduced-sodium chunky tomato sauce 1 can artichoke hearts, drained, quartered 3 tablespoons dry sherry 2 teaspoons dried Italian seasoning 12 ounces medium shrimp, peeled, deveined Salt and pepper, to taste 8 ounces penne, cooked, warm |

Method: Saute pepper blend and garlic in oil in large skillet until tender, about 5 minutes, add tomato sauce, artichoke hearts, and sherry. Heat to boiling, reduce heat and simmer, covered, 5 minutes. Add Italian seasoning and shrimp, simmer until shrimp are cooked, about 4 minutes. Season to taste with salt and pepper, serve over penne. |
