Seafood Sampler Recipe

This sensibly seasoned chowder is great with Herb Croutons

 

Ingredients:

1/2 cup each: chopped yellow bell pepper,

chopped onion

1 teaspoon olive oil

1 can reduced-sodium diced tomatoes, undrained

2 medium potatoes, cubed

1/2 cup dry white wine or water

1/2 teaspoon celery seeds

1 teaspoon herbs de Provence or dried Italian seasoning

8 ounces haddock or halibut, cubed

4 ounces each: bay scallops, peeled deveined shrimp

1/2 teaspoon hot pepper sauce

Salt, to taste

Method:

Saute pepper and onion in oil large saucepan until lightly browned, about 5 minutes. Add tomatoes with liquid, potatoes, wine and herbs, heat to boiling. Reduce heat and simmer, covered, until potatoes are tender, about 10 minutes. Add seafood; simmer until haddock is tender and flakes with a fork, about 5 minutes. Stir in hot pepper sauce; season to taste with salt.
